I think a mozzarella, provolone, or even an asiago cheese would be acceptable substitutions for the gruyere if you don't want to use it. I might not use a parmesan since it has a lower moisture content, melts more slowly, and may make the sauce a little dry. It couldn't hurt to grate some on top at the end, though!

You can't go wrong with three cheeses can you? I was wondering if I can use mozzarella or fresh Parmesan instead of the Gruyere. I have never used it before now, so I am a little worried about trying it. I am a fan of all the rest of the ingredients. I can't wait to cook it.
