What could scream “it’s the holidays” more than warm sweet potatoes topped with toasted, sugared pecans? The answer, arguably, is nothing. This recipe for The Best Sweet Potato Casserole Ever will have your guests coming up for seconds (or even thirds) at this year’s Thanksgiving, Christmas, and holiday parties.
Using the slow cooker to make this simple sweet potato casserole keeps you from spending all of your time in the kitchen on an already busy day. After peeling and cutting the sweet potatoes, set them to cook in the slow cooker for three hours with butter and broth while you go off and accomplish other things. The real standout in this recipe, though, is the pecan topping. This topping is as easy to make as it is to eat. Brown sugar and vanilla in the pecan topping help to give the sweet potatoes their beloved sweetness.
Easy side dishes like this are also great for traveling in a car ride to another house. If your holiday party is at a family member or friend’s home, simply bring your slow cooker in the car along with you and plug it back in to warm the sweet potato mash when you arrive.
With all of its deliciously irresistible flavors, this sweet potato casserole is the ultimate holiday party starter.

Preparation Time15 min

Slow Cooker Time HIGH6 hr

  • 5 medium to large sweet potatoes
  • 2 cups chicken broth
  • 1 cup butter, cubed
  • 2 eggs, lightly beaten
  • 1 teaspoon vanilla
  • 1 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 cup melted butter
  • 1 cup chopped pecans
  • 1 cup flour

  1. Peel sweet potatoes and cut into even 1-2 inch cubes.

  2. Put the potato cubes in the slow cooker, add chicken broth, and sprinkle the cubed butter on top.

  3. Cover and cook on HIGH for 3 hours (or until sweet potatoes are soft enough to mash). Using a potato masher, mash the sweet potatoes up to your desired consistency.

  4. Add the lightly beaten eggs, brown sugar, vanilla, cinnamon and nutmeg to the mashed sweet potatoes. Stir to combine.

  5. In a separate bowl, mix together the topping ingredients. Spread the topping evenly over the slow cooker sweet potatoes.

  6. Cover and cook on HIGH for 2 more hours. Then serve warm right out of the slow cooker. Enjoy!

Ahhhh sweet potatoes...the thing dreams are made of at holiday time, or anytime at all for that matter. I probably would use vegetable broth instead of chicken and I couldn't help but wonder if the eggs would scramble in the cooking process. Maybe if they were beaten with the sugar mixture before hand that would prevent from happening...if it does.
