Using the slow cooker to make this simple sweet potato casserole keeps you from spending all of your time in the kitchen on an already busy day. After peeling and cutting the sweet potatoes, set them to cook in the slow cooker for three hours with butter and broth while you go off and accomplish other things. The real standout in this recipe, though, is the pecan topping. This topping is as easy to make as it is to eat. Brown sugar and vanilla in the pecan topping help to give the sweet potatoes their beloved sweetness.

Ingredients

  • 5 medium to large sweet potatoes
  • 2 cups chicken broth
  • 1 cup butter, cubed
  • 2 eggs, lightly beaten
  • 1 teaspoon vanilla
  • 1 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 cup melted butter
  • 1 cup flour
  • 1 cup chopped pecans

Instructions

  1. Peel sweet potatoes and cut into even 1-2 inch cubes.

  2. Put the potato cubes in the slow cooker, add chicken broth, and sprinkle the cubed butter on top.

  3. Cover and cook on HIGH for 3 hours (or until sweet potatoes are soft enough to mash). Using a potato masher, mash the sweet potatoes up to your desired consistency.

  4. Add the lightly beaten eggs, brown sugar, vanilla, cinnamon and nutmeg to the mashed sweet potatoes. Stir to combine.

  5. In a separate bowl, mix together the topping ingredients. Spread the topping evenly over the slow cooker sweet potatoes.

  6. Cover and cook on HIGH for 2 more hours. Then serve warm right out of the slow cooker. Enjoy!

Ahhhh sweet potatoes...the thing dreams are made of at holiday time, or anytime at all for that matter. I probably would use vegetable broth instead of chicken and I couldn't help but wonder if the eggs would scramble in the cooking process. Maybe if they were beaten with the sugar mixture before hand that would prevent from happening...if it does.
