Soup is one of my comfort foods. I know a lot of people think of soup as a meal to prepare during the winter months but I can eat soup all year long. I like that this recipe can be prepared in the slow cooker and yield a gracious plenty so I can have this for lunch for a few days.

Love this colorful Slow Cooker Creamy Minestrone recipe. A vegan recently was added to the family by marriage and I am always on the scout looking for food choices to serve that everyone will like. The colors in this soup are so appetizing, I don't think anyone will think about the lack of meat. I'll just have to leave out the parmesan chunk.

I am so happy that we finally bought a lovely new slow cooker to replace our old broken one and when I find recipes like this one I have no idea how we did without one for so long! This is an exceptionally delicious minestrone recipe. The pureed cannelini beans are a very nice inclusion and bring a lovely aspect to the dish. Everyone loved it and it is a perfect way to feed veggies to the brood, lol

I love the pretty array of colors all the various veggies give to this satisfying and hearty soup. And since it is chock full of healthy stuff, you can at however much you want without feeling guilty. The leftovers taste even better the next day, and even freeze well. I might serve it with some toasted crusty Italian bread for dunking for a complete comforting meal.
