This recipe looks so delicious! I will have to find the site this was on, because the link here is not working. I think this would make a great dinner alternative to the traditional taco, especially if you are in a hurry in the evening and need to have dinner on the table quickly.

Wow! What a delicious sounding (and looking!) weeknight dish for the family. There are tater tots layered on the bottom of the crock AND on top of the beef/bean/tomato/corn mixture. Then use MILD cheddar cheese to help stick it all together, so to speak. Sharp cheddar has a tendency to burn. MY experience making mac n cheese witih sharp cheddar? Not good.

Tacos and tater tots? It sounds like an unconventional match made in heaven! I can't wait to make this casserole.
