"Comfort food through and through. Shepherd's Pie is an American classic. I for one, have never made my pies with diced tomatoes and or tomato paste, so the fact that she left that intentionally out of this recipe is a-okay fine by me. "Wow! What a delicious sounding (and looking!) weeknight dish for the family. There are tater tots layered on the bottom of the crock AND on top of the beef/bean/tomato/corn mixture. Then use MILD cheddar cheese to help stick it all together, so to speak. Sharp cheddar has a tendency to burn. MY experience making mac n cheese witih sharp cheddar? Not good."
