It was so refreshing to see a pulled pork recipe that isn't swimming in ketchup and brown sugar! Not only is it much lighter, but it is also so much more versatile. The fresh veggies add such great crunch and color, and compliment the tender juicy meat! The plums are a very surprising addition to this entre salad, but they work very nicely - a little sweet and tart!

I love recipes such as this one. I get my lean protein AND I get my fresh greens and vegetables, with not a lot of fat OR calories. Now, as is the case with me a lot, I am short on time or energy... or BOTH. They make pre-made chopped salads now. There are quite a few brands out there and some I have seen that are organic! This is a great time saver if needed.
