Slow Cooker Pulled Pork Salad

Pulled Pork Salad with Crispy Maple Lardons
Slow Cooker Pulled Pork Salad

"This simple pulled pork recipe is served salad style, with charred plums, roasted veggies, crispy maple lardons, and a healthy apple cider dressing. This is a gluten free, low carb option that works for every day of the week. This pulled pork is very easy to prepare, only requires some seasoning, searing and slowly braising this beautiful pork shoulder. You are left with tender, well cooked, pull apart pork that not only works well on a salad, but mixed with your favorite BBQ sauce on a crusty bun."

It was so refreshing to see a pulled pork recipe that isn't swimming in ketchup and brown sugar! Not only is it much lighter, but it is also so much more versatile. The fresh veggies add such great crunch and color, and compliment the tender juicy meat! The plums are a very surprising addition to this entre salad, but they work very nicely - a little sweet and tart!

I love recipes such as this one. I get my lean protein AND I get my fresh greens and vegetables, with not a lot of fat OR calories. Now, as is the case with me a lot, I am short on time or energy... or BOTH. They make pre-made chopped salads now. There are quite a few brands out there and some I have seen that are organic! This is a great time saver if needed.
