That is such a great tip to slice the roast before cooking it! Not only is it easier to serve up at the end, but the greater surface area allows the meat to take on more of those sweet and savory flavors. I threw mine under the broiler for a few minutes at the end to crisp up the bacon a little bit.

How does it get any better than bacon wrapped pork roast? Do you cook the sauce for any amount of time, or do you take it off of the fire as soon as it starts to boil? Do you bring it to a full boil, or just get it to bubbling before shutting it off? Also, do you let the meat rest or sit after you glaze it?
