I am seriously considering this as my offering for our holiday pot luck. My recipes have to be extremely simple and to the point. They also have to be cheap to make. However, I would want to double it. So that being said, seeing as how I'd be adding 8 cups of broth and three cups of rice in my cooker, would it be too much to hold after it cooks up? I'd hate to have a kitchen mishap the night before Christmas!

This is a great go - to side dish, and it has such a wonderful savory flavor from the sundried tomatoes! I added some minced fresh garlic to mine, and topped it with some fresh basil right at the end, and it smelled heavenly! I served it alongside some grilled fish and zucchini, but I could easily eat this stuff as a meal on its own for lunch!
