Chunks of beef and carrots cook in a savory mixture of tomato soup, beef broth, and red wine. Beans give make this stew hearty, while Italian seasoning gives this recipe a fantastic aroma. This Tuscan Beef Stew cooks until the carrots are tender and the beef is succulent and juicy.

Serve up this beef stew with a chunk of crusty bread for the ultimate Tuscan meal. This is a wonderful hearty stew that's perfect during the cold weather season.

Ingredients

  • 1 (10-3/4-ounce) can Campbell's Condensed Tomato Soup
  • 1 (10-3/4-ounce) can Campbell's Condensed Beef Broth
  • 1/2 cup Burgundy wine or other dry red wine or water
  • 1 teaspoon dried Italian seasoning, crushed
  • 1/2 teaspoon garlic powder
  • 1 (14-1/2-ounce) can diced tomatoes with Italian herbs
  • 3 large carrots, cut into 1-inch pieces (about 2 cups)
  • 2 pounds beef for stew, cut into 1-inch pieces
  • 2 (15-ounce) cans white kidney beans (cannellini), rinsed and drained

Instructions

  1. Stir the soup, broth, wine, Italian seasoning, garlic powder, tomatoes, carrots and beef in a 3 1/2-quart slow cooker.

  2. Cover and cook on LOW for 8 to 9 hours or until the beef is fork-tender.

  3. Stir in the beans. Increase the heat to HIGH. Cook for 10 minutes or until the mixture is hot.

What a beautiful and vibrant indulgence this stew is...and perfect for a cold evening in with the family. If the rich tomato wine gravy, melt in your mouth beef and your favorite italian bread alone doesn't leave you pining for more, it's big chunky veggies will no doubt keep you satisfied. I love everything about this recipe and can't wait to try it.
