This easy pot roast recipe is simple yet hearty. Hope's Italian Pot Roast is bursting with great beef flavor and tender chunks of sweet potatoes. The roast is seasoned with Italian seasoning and garlic. You can cook this roast in whatever you have on hand, whether it is beef stock, water, or red wine. This slow cooker pot roast recipe is perfect for busy days because it is amazingly delicious and impossibly easy to put together.

Can I just use regular potatoes or maybe some red potatoes in this dish? I am just not a fan of sweet potatoes at all. I love the flavor, but there is just something about the texture that throws my taste buds all off. I love the use of Italian seasoning in the dish. I think it adds another layer of flavor that you are not expecting.
