Get yourself quality thick hot dog buns, or better yet- soft sub rolls or brat buns. Quite a unique SUper Bowl party offering, or for a family get together/picnic. Serving a heaping spoon of this over a good beef hot dog with a side of corn chips thrown on top is one of the ways suggested by the author of the recipe! Kind of like a chili dog?

I have to agree with msdeb21 that this dish is a perfect option for Taco nights. Do you think it would work good with a little more taco seasoning? I like the flavor of taco seasoning, but I think that one and a half packs for three pounds of meat is too little. I think a pack per pound would work better since you are using the beans and enchilada sauce.

We like sloppy joes and tacos at my house. I think I could offer up hamburger buns, taco shells, and tortillas so we would have a choice of calling it a traditional sloppy joe, or a taco, both hard-shell and soft-shell. This is a great weeknight dinner for Taco Tuesday. I'll have lettuce, tomatoes, olives, and jalapenos available for toppings.
