Do you have a preference on the brand of Italian seasoning that you use, or does it really matter with this dish? I like to use the zesty Italian dressing, it gives the dish a little more kick than the regular Italian dressing does it seems. I like that you used just beef broth instead of a lot of different sauces and ingredients. I think the beef gravy works just fine.

I have found that sometimes the stuff that gets packaged and sold as stew meat can be rather high in fat content, so I might give it a quick saute in a skillet first to render some of the extra fat so that it doesn't all get into the sauce. As far as veggies, you could add some sliced red and green bell pepper about halfway through the braising process (I like to retain some of its crisp texture) for a pepper steak variation, and broccoli would be very good in this as well.
