Creamy Chicken Noodle Casserole is one of the most comforting recipes you'll ever make in your slow cooker. This easy casserole recipe has everything you love about chicken noodle soup, but baked into a warm and creamy casserole dish. Notes

*You can use a combination of water and canned or homemade broth. Using all broth will increase the “chicken-y” flavor. 



**Canned chopped pimentos are simply preserved red bell peppers, not spicy. They add nice color and additional flavor but can be omitted if you don’t have any on hand.  They come in various size jars, including a 2-ounce size, or if you buy a larger jar, any extra will hold in the refrigerator several weeks.

Ingredients

  • 1 pound boneless, skinless chicken (breast or thighs or a combination)
  • 1 (10-ounce) can cream of chicken soup
  • 2 (14-1/2-ounce) cans chicken broth*
  • 1 bay leaf
  • 1 (12-ounce) package wide egg noodles
  • 1/2 cup chopped celery
  • 2 ounces canned, chopped pimento**
  • salt and fresh ground pepper

Instructions

  1. Spray a slow cooker with vegetable spray.

  2. Pour the (undiluted) soup and the broth into the pot and add the bay leaf. Stir to combine.

  3. Place the chicken into the broth mixture, cover and cook on HIGH for 3 hours.

  4. Remove the chicken and shred with two forks into bite-size pieces.

  5. Add the dry noodles to the slow cooker, and stir to moisten. Return the chicken to the pot and stir in the celery and pimento.

  6. Cover again and continue to cook for 1 more hour, stirring once or twice.

  7. Remove bay leaf, and taste for seasoning. Add salt and fresh ground pepper to taste.

So I am going to go out on a limb here and say that perhaps the addition of the pimentos are the secret ingredient? They pack so much flavor in a small little package. Anybody else think this is a good dish to pass for a holiday party? So many times there are two, three, or four versions of the green bean casserole. How about bringing something like this instead? Man, I would eat half of it myself!

I love everything about chicken noodle soup, especially when Winter is in the air. I never really thought about making it in a crock pot though. Is there a special type of noodle you would have to use in order to prevent them from getting mushy or do you think any egg noodle would suffice? I love that you added pimentos to the recipe...I've never had them in my chicken noodle but I bet it makes all the difference.
