This definitely looks like an interesting recipe. I was willing to try it until I saw it uses collard greens. I do not live in a place where they grow, and I cant honestly say I have seen them in the grocery stores. I suppose I could try with spinach as suggested, but really I would not want to alter the recipe on the first try.

What an interesting idea for a taco casserole. I give props to her (or him) for coming up with a veggie casserole using collard greens no less! Not many people cook collard greens, but if you are one of those who DO, you might be looking for something different to incorporate them into your dinner menu.

That is a great question. You probably could use spinach. It will alter the taste slightly, but I think that is what you are hoping for. You could also pop by out Facebook site at AllFreeSlowCookerRecipes and chat with others about the substitution.
