Paleo Slow Cooker Cauliflower "Rice"

Paleo Slow Cooker Cauliflower
This image courtesy of AllFreeSlowCookerRecipes.com

Paleo Slow Cooker Cauliflower "Rice" is a great recipe for those keeping a strict paleo diet but who still want to enjoy common and familiar side dishes. Although this side dish recipe is a little different than what you're used to, the flavors are undeniable. If you never knew you could transform cauliflower into rice, you aren't alone -- it's not frequently done. However, when it is, it's absolutely delicious, not to mention a wonderful alternative to plain white or brown rice. This recipe goes great paired with a Chinese chicken dish like this one for Paleo Slow Cooker Orange Chicken.

Serves6

Ingredients

  • 1 large head cauliflower, trimmed into florets (about 5 cups)
  • 1/2 cup unsweetened shredded coconut
  • 1 tablespoon olive oil
  • 3/4 cup finely chopped onion
  • 2 teaspoons finely minced garlic
  • 1 to 2 teaspoons sesame oil
  • pinch of salt

Instructions

  1. Use a food processor to pulse cauliflower and coconut until the mixture resembles grains of rice you will need to do this in batches.

  2. In a 12-inch nonstick fry pan, place the olive oil and, over medium high heat cook the onions and garlic until fragrant, about 1 minute. Stir in the cauliflower / coconut mixture and the sesame oil and salt. Toss over medium high heat, stirring and cooking only until the mixture is warm, about 5 minutes.

  3. Use in place of rice to serve with any dish.

In my quest to live a much healthier lifestyle I've heard so much about how cauliflower is taking the place of so many of the foods most of us enjoy...but usually end up regret eating afterwards. I personally am a huge fan of rice and this looks like it would be a great alternative. I can't wait to try it. Being a fan of Chinese food...I bet the benefits would be enormous, not to mention the taste!
