I see that you use a lot of mushrooms in this dish, but unfortunately I am allergic to them. Do you have something else you can recommend for me to use to take the place of the fungi? I want to try this dish, but I don't know if I need more onion or carrots, or maybe just some extra potatoes.

Pot roasts are always good comfort food, and isn't doesn't matter what time of year you make them, when you use your slow cooker. I wonder if the onion soup makes it taste too salty? I've never used cream of mushroom soup with my pot roast. I'm sure that will taste great with the vegetables.
