I always have chicken breasts on hand and we love anything taco, enchilada, burrito, or fajita! I will pick up the peppers this weekend and plan this for next week. I'll serve it with refried beans and Mexican rice. Thank you for such an easy recipe that sounds delicious!

I love the authentic flavors in the homemade fajita seasoning used here. It tastes much more fresh and vibrant than those store bought packets, since it has not been sitting on a shelf for ages and isn't cut with a ton of salt. I love that when you cook it this way you don't have to wait for the grill to fire up or have to clean a messy stovetop!

This recipe looks so good! I love that it includes homemade seasoning mix, too, so you can adjust the flavor to get it just the way you like it.
