Oh my goodness! I love zucchini, but I can never find enough healthy recipes using it in ways that are tasty. Have you ever used the vegetable in a chocolate cake? My mom has a recipe that will have you asking where the zucchini is when there are a couple in the cake. It is so moist and delicious and chocolatey, that it makes my mouth water just typing about it.
