Are the caraway seeds necessary in this dish? I have never used them, and I have no idea where to find them even. What do they taste like? Are they similar to any other spice out there? I like that this dish has some depth and spice to give it a bold flavor.

Caraway seeds are commonly used in rye bread, and kummelweck rolls used for beef on weck sandwiches, they give it a distinctive flavor. They may add another layer of flavor to this dish.

I make goulash quite often as it is a favorite at our house. Cooking it in the slow cooker makes makes the meat really tender and delicious so it is possible to use a cheaper cut of beef. I have never made goulash with parsnips and carrots but I do use lots of marjoram and caraway deeds. I serve it over bread dumplings or mashed potatoes.
