Ingredients

  • 3 pounds beef chuck roast
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 3 medium potatoes, quartered
  • 4 carrots, cut into 2-inch pieces
  • 2 medium onions, quartered
  • 1 cup beef broth

Instructions

A long cooking time in moist heat will tenderize a tougher cut of meat. Therefore, using a lower-priced cut, such as chuck roast, is economical as well as delicious.

  1. Sprinkle beef chuck roast with salt and pepper.

  2. Place half of vegetables in bottom of slow cooker crock, top with roast, then add remaining vegetables and liquid.

  3. Cover and cook 5 hours on HIGH or 8 hours on LOW.

I like how you used the cheaper cuts of meat to make this dish. Have you ever used something like round steak in a dish like this one? I know it is not a roast, but I am looking for recipes that use that type of meat and can give you a tasty and moist dish that everyone will enjoy.

There's nothing like traditional pot roast. I generally make mine in the oven, but I imagine this would save so much time and the roast itself would be a lot more tender. I think the only thing I'd do different is sear the roast first before putting it in the crock pot to give it more depth in flavor. And, I'd make my mashed potatoes from the pot roast. Talk about flavor overload...yum!

This slow cooker beef roast is a standard recipe, nothing new, but IS very tasty. However, why would you suggest serving it with mashed potatoes to complete the meal when there are already lots of potatoes in the dish? )
